• 1 turkey (about 3-3 ½ kg)

For the baking mix

  • The juice from 1 orange
  • The juice from 1 lemon
  • 2 full tablespoons of butter
  • ½ cups of red wine

For the filling

  • 500gr ground beef
  • 1/3 cup of rice (glacé or Carolina)
  • 1 large hushed onion
  • 1 cup of pine nuts
  • ½ cup of raisins
  • 5 dry plums without the core (hashed)
  • 1 sour apple, peeled, cut in small pieces
  • Juice from 1 lemon
  • ½ cup of red whine
  • 1/3 cups of extra virgin olive oil LACON
  • 1/3 teaspoon of allspice
  • Salt, pepper

Method: Wash the turkey thoroughly, add salt and pepper all over and baste it with lime juice. Preheat the oven to 200 degrees and prepare the filling: in a pan, slightly fry the onion in olive oil, then add the ground beef and stir until hashed. Add red wine, salt, pepper and allspice and then add ½ glass of water. Boil in low heat until the ground becomes soft. Add the rice, the sour apples, the pine nuts, the raisins, and the plums and mix all together. Remove from the fire.

Fill the turkey and sew up the belly. Put the turkey in a buttered cooking pan and spread it with half of the mix that we prepared. With the rest of the mix, continue spreading during the cooking time. Add a cup of water to the pan. Put the leftover filling in the pan next to the turkey.

Put the cooking pan in the oven and low the temperature to 200⁰C . Bake for about 2 1/2- 3 hours, spreading with the mix every now and then. Add more water if needed. After removing the turkey from the oven, cover it and let rest for half an hour. Serve in a large plate. Put the turkey in the centre and add the filling all around the turkey.
